Cookfulness – Season Three


Cookfulness is a series of six Cookery workshop sessions specially created for people with pain and/or conditions that make cooking difficult or seemingly off-limits. You’ll learn amazing and very simple ways to adapt cooking, adapt ingredients and adapt dishes, so you can cook them and celebrate them no matter how bad a day you are having! The current season (3) has now finished but we hope it will be back soon – in the mean time catch up on all the previous sessions in the below videos or the playlist below.

Mr Cookfulness

Ian Taverner is a chronic pain and mental health survivor. He has a young family and, through these illnesses, regrettably missed a lot of family life, missed being a husband, being a dad.

Now on an upward path out of adversity, Ian has dedicated his life to helping other fellow sufferers and their loved ones improve their quality of life through the therapeutic power of cooking, just as it has done for him.

Ian will show you how to make 3 dishes in each session, with 6 sessions in this series, followed by a great chance to chat, ask questions and have some fun!

As Ian says: “Cooking has given me a role, given me pride – both in myself and of others in me – it’s given me hope and given me some passion!”



The Cookfulness concept

Ian Taverner is the creator of a brand new type of cookbook – Cookfulness – which strip away many of the barriers associated with cooking, replacing them with positive stepping stones to help you achieve, no matter what type of day you are having. The ‘Cookfulness’ concept takes much of the mystery and pressure out of cookery, turning it into a joyful and rewarding activity for all.

Ian won the Achiever of The Year award in 2021 from Able2UK  

He also is the new and only feature recipe writer for the national disability lifestyle magazines PosAbility and Able

Baked bean burger – Baked Bean Rolls – Curried Baked Beans

Baked bean burger 1 tin baked beans 40g bread crumbs 1 tbspn coriander 1/4 onion chopped (or frozen) 1 tspn garlic 1 tspn olive oil 1/4 tspn cinnamon 1/2 tspn paprika 1/2 tspn cumin 1/2 tspn chilli flakes 1/2 tspn ginger Squirt ketchup if want! Baked Bean Rolls 1 can baked beans 1/4 onion chopped (or frozen) Cooked baked pieces 1/3 cup grated cheese 1/2 tspn smoked paprika 1 ready roll / block puff pastry Beaten egg for wash Curried Baked Beans 1 can baked beans 1 tspn dried chilli 1 tspn chopped ginger 2 tbspn curry powder 1 tbspn olive oil Salt and pepper Natural yoghurt, coriander & poppadoms to serve

Session Two – Breakfasts

Session Two Recipes – Granola – Quinoa Breakfast Bake – Oat Waffles

Granola   2 cups GF porridge oats 1/2 cup chopped walnuts 3/4 cup mixed seeds 1 1/2 tspn cinnamon 2 tbspn coconut oil 1 tsp vanilla extract  2 tbspn maple syrup  Salt Quinoa Breakfast Bake   1 1/2 cup quinoa 1 cup blueberries 1/2 cup raspberries 1 1/2 cup strawberries  1/4 cup chopped walnuts  3 eggs 3 cups almond milk 1/4 cup maple syrup 1 tbspn cinnamon  1 tspn ground ginger Oat Waffles    1 cup GF oat flour (whizzed GF porridge oats) 1 1/2 tspn baking powder  1 tbspn cinnamon 1 tbspn chia seeds 1 egg 1/2 cup almond milk 1 tbspn maple syrup  1 tbspn melted coconut oil  Salt

Session Three – Sauces

Session Three Recipes – Pesto – Green Sauce – Bibimbap

Pesto Ingredients 2 cups fresh Basil ½ cup walnuts ¼ cup olive oil Zest of 1 lemon 1 tablespoon lemon juice (1 lemon) Salt & pepper Green sauce Ingredients 2 cans coconut milk 2 cups fresh Basil 1 tablespoon chopped ginger or ginger paste ½ teaspoon Turmeric Juice and zest of 1 lime Bibimbap Ingredients 3 tablespoons red pepper paste ½ teaspoon soy sauce 1 teaspoon apple cider vinegar 1 teaspoon sugar 1.2 teaspoon sesame seeds 1 teaspoon sesame oil

Session Four – Drinks

Session Four Recipes – Pineapple & Mint Smoothie – Ginger & Turmeric Smoothie – Mocktails

Pineapple & Mint Smoothie 1 cup frozen pineapple ½ cup fresh mint leaves ½ cup fresh spinach ½ cup almond milk 1 teaspoon vanilla extract ½ cup water Ginger & Turmeric Smoothie 1 banana sliced and frozen 1 cup spinach 1 teaspoon cocoa powder 1 teaspoon chopped ginger or ginger paste ¼ teaspoon turmeric 1 cup almond milk 1 tablespoon peanut butter ½ cup water Fruit & Ginger Beer/Ale Mocktails 3 strawberries quartered or handful of fresh blueberries 4 mint leaves juice half a lime ice cubes Ginger Beer/Ale

Session Five – Deserts

Session Five Recipes – Crumble – Ice cream – Apricot and Coconut slice

Crumble 3 & 1/2 cups frozen blueberries/Mango mixed (or whatever proportions you prefer) 1 cup GF Oats 1/4 cup hazelnuts 1 teaspoon cinnamon 1.2 teaspoon ground ginger 1/4 teaspoon nutmeg 2 tablespoons melted coconut oil 1 tablespoon maple syrup Ice cream 4 frozen bananas chopped 1/4 cup cocoa powder 1/3rd cup almond milk 2 tablespoons peanut butter vegan dark chocolate broken into pieces fresh raspberries alternative option replace frozen bananas with frozen raspberries or mango replace almond milk with coconut cream from top of 2 cans full fat coconut milk Apricot & Coconut slice 1 & 1/2 cups soft apricots 1 cup GF oats 1/2 cup walnuts 1 tablespoon chia seeds Juice & zest of 1 lemon 1 teaspoon vanilla extract 1/2 teaspoon turmeric twist of ground black pepper 1/4 cup shredded coconut

Blueberry cheesecake 4 large dates 1 cup hazelnuts 2 cups coconut cream juice 1 lime zest 1 lime 1.3 cup cashews 2 tablespoons maple syrup 1 cup blueberries 2 extra dates 1/2 cup extra blueberries Strawberry Jammy Cake 130g Gluten Free self raising flour* 1 teaspoon baking powder* *If using GF Plain flour then up the baking powder to 3 teaspoons in total 115b melted coconut oil or butter 150g sugar 120ml Almond milk 1/2 teaspoon vanilla extract pinch salt Lemon & Strawberry Mug Cake 1 egg (use 2 tablespoons of whisked) 1/4 cup sugar 3 tablespoons melted coconut oil 5 tablespoons Gluten Free Plain Flour 1/8th teaspoon anthem gum 1/8th teaspoon baking powder Juice 2 lemons Zest 1 lemon 3-4 large strawberries 1/4 cup icing sugar Pinch salt
